How Is Whisky Made? The Five Stages

Whisky is made in five stages: malting, mashing, fermentation, distillation and maturation. The grain and the cask do most of the work; everything else is control.

How is whisky made?

Barley is malted and dried, milled and mixed with hot water to extract sugars, fermented into a beer-like wash, distilled to concentrate the alcohol, then matured in oak casks for at least three years.

Each stage narrows what the final spirit can be. You cannot add character back later — only the cask continues to change it.

How much flavour comes from the cask?

A large majority. Industry estimates commonly attribute 60–70% of a mature whisky’s flavour and effectively all of its colour to the wood.

That is why ex-sherry and ex-bourbon casks produce such different results from the same distillate.

What ABV is whisky?

Whisky must be bottled at a minimum of 40% ABV. Most standard bottlings sit between 40% and 46%.

Cask strength bottlings are not diluted and typically run 55–65%. They cost more per bottle but deliver more servings at a standard pour.

What does an age statement mean?

The age on a bottle refers to the youngest whisky in it, not the average. A 12-year-old blend may contain much older stock.

No-age-statement bottlings simply omit the number. They are not automatically inferior, but they remove a comparison point buyers rely on.

Does whisky age in the bottle?

No. Maturation stops once whisky leaves the cask. A 12-year-old bottled in 1990 is still a 12-year-old today.
